Sweet and Savory Roasted Cauliflower


Cauliflower Prep

  • 1 Large cauliflower, cut into bite size pieces
  • 1/2 tsp salt
  • 1 tsp. paprika
  • 1 1/2 tsp dried oregano
  • 1 TBS olive oil (optional)

Dressing Prep

  • 1 TBS evoo
  • 1 TBS lemon juice
  • 1 tsp lemon zest
  • 1 TBS apple cider vinegar
  • salt and pepper

Salad Prep

  • 1/2 C dates, chopped
  • 1/2 C parsley, chopped
  • 1/3 C red onion, chopped or thinly sliced
  • 1/3 C pine nuts, toasted


  1. Preheat oven – 400°
  2. Place chopped cauliflower in large bowl.  Gradually sprinkle with the paprika, oregano, and salt – tossing as you go for good coverage.  Spread cauliflower onto baking sheet and bake/roast for 20-30 minutes.  It should be tender and nicely colored.
  3. Next, in a small bowl, whisk together all dressing ingredients.  Set aside.
  4. Prepare all Salad ingredients and place in large bowl.  When the cauliflower is finished baking, add to these ingredients.  Pour the dressing over the top of all and toss until well coated.  Enjoy!
