Spicy Lemon Quinoa

3 cups quinoa
3/4 cup toasted pine nuts
3 tsp. freshly grated lemon zest
1/2 cup chopped flat-leaf parsley
2 tsp. ground cumin
1/2 tsp. cayenne
1/2 cup lemon juice
1/4 cup evoo
salt of choice
black pepper


Cook quinoa according to package instructions. Transfer to a medium bowl along with pine nuts, lemon zest, parslsey, cumin, cayenne; drizzle with lemon juice and evoo. Season with salt and pepper; toss until well combined. Serve warm or at room temperature.
