Massaged Kale Salad

  • 1 Bunch Kale – stems removed and cut into bite size pieces
  • 1 tsp. salt 1/4 C olive oil
  • 2 TB raw apple cider vinegar 1/4 C diced red onion
  • 1/3 C currants
  • 3/4 C diced apple
  • 1/3 C sunflower seeds, toasted
  • 1/3 C feta or gorgonzola cheese (optional)

In a large mixing bowl, add kale and salt, massage salt into kale for 2 minutes.  Gently stir in remaining ingredients except for cheese.  taste salt and vinegar.  When at desired flavor, gently stir in cheese.
