Kale-Quinoa Salad

Kale-Quinoa Salad

  • 8 C curly kale – stems removed, chopped
  • 1 C red quinoa – cooked (1/4 C uncooked)
  • 1 can garbonzo beans
  • 4 eggs – hard boiled – chopped
  • 2 medium tomatoes – chopped
  • 1 large carrot – shredded
  • 1/3 C sweet onion – chopped
  • 1/2 C parmesan cheese – shredded
  • 1 C croutons – crushed

Mix all ingredients, then toss in following dressing.

Lemon Garlic Vinaigrette

  • 1/2 C extra virgin olive oil
  • 4 TB freshly squeezed lemon juice
  • 1 tsp dijon style mustard
  • 2 cloves garlic – minced
  • 1 1/2 tsp coarse salt
  • 1/4 tsp pepper
  • (optional: 1tsp fresh thyme leaves or herb of choice, chopped)
